We've always hung deer up by the hind legs on a spreader If it was to be a trophy mounting the bleed out cut would be made low in the neck then the head would be pulled way back to allow for a good bleed then make a belly cut remove the entrails and organs then ring cut around the the legs make a long slice on the insides of the legs down to the belly cut ring cut around tail and, but and genitals ending at the belly cut then pull the skin down to the head then cut away the hide leaving as long of a cape as needed for the mounting remove the head then quarter the carcass everything was done right in camp or in my case now if I wanted it would be in my back yard
