I'll start right off with mine:
New Yankee Workshop - Norm Abram is an amazing woodworker and one heck of a craftsman. Watching him work is always inspirational.

I don't own a TV or pay for cable so I don't know what's out there in the past 10+ years really. I have seen Jesse james metal church on youtube and that was pretty entertaining. He really had an amazing collection of machines an a nicely put together shop.
He knows what he's doing with an English wheel, that's for sure.
Anyone remember Roy Underhill and The Woodwright's Shop? I always liked that one, too.

I used to enjoy Junkyard Wars. We also don't own a TV or pay for cable, although between YouTube, Netflix, and Amazon Instant Video, we probably have access to more "TV" now than we ever did.
I'm surprised that there are more than a few who don't have TV, myself included. To be honest though, I gave up on TV only when broadband connections became available. Don't really watch building-related shows, unless that Chip Foose show counts. I'm more of a Discovery and History channel guy. And Top Chef. ;)

I'm not aware of such programs in France, but actually I don't know, never watch TV.
My only TV is Youtube, I'm a big fan of Mathias.
