I see many videos with using a angle grinder cutting flat stock freehand.
I find I must at least have the material secured to the bench for my safety.
Am I being overly cautious or just a big sissy.

Sounds like good advice to me! I value my fingers. :D
The only time I don't secure it is if it's a large piece with a good amount of weight, sometimes I even clamp that! Anything smaller gets clamped to my saw horse for sure. (I do all cutting outside) Way too easy for the wheel to grab the part.
