They are also used to "de-burr" the remaining bone after you whack your finger off with a table saw.

Dr.1: I think we should cut this guy open and gouge out his bones.
Dr.2: That sounds like a great idea. I'll get a tray full of bone rongeurs. This will be fun.
Dr.1: Also get a pin so we can poke him.

Meanwhile; I hope Karl_H doesn't know their use by first hand. Either one.

You know s... is getting serious when your surgeon's tools have spines on the handles so he can get more leverage without them slipping.
