Is the meat pressed onto the turntable under so much pressure that it is flattened to nearly nothing then expands once exposed to the air?
If so then that would explain why pressed patties never have the same taste as other ground meat.
Or are there cavities where the meat is pressed into that rise up to the level of the disk pushing the meat out as it does.

Cavities, much like pills are pressed into.
