Carving a mango flower - GIF and video

Carving a mango flower. Really a superb street food GIF (technically maybe a ball park?). Enormous mango, nice blades, smiling well-dressed vendor, clean setup, clever preparation.

Looks like some spray lime juice added at the end, plus maybe Tajin chili powder seasoning.
