    The holes in Swiss cheese are caused by trapped gases at it cures. Swiss cheese U will eat molded curd NO.
    Never try to tell me it can't be done
    When I have to paint I use KBS products

    The cheese they are poking holes is appears to have voids similar to those in Swiss. At least on the surface.

    Just curious.

    My question is what bacteria is on those pikes being poked into the cheese to cause mold spores to grow
    Never try to tell me it can't be done

    It appears to be Penicillium roqueforti. According to....

    It seems the spores are already in the cheese. The spikes let air into the cheese allow the mold to grow differently.

    All new to me. Knew cheese was just “moldy milk”. But have not idea the whole process.
