Would be very interesting to see a tour of the grinder. It seems to work excellent.
It appears to just be two motors driving the wheels separately. There is an adjuster to slide the wheels closer together or apart. Cannot be sure but there appears to be a threaded rod behind the wheels. The rod appears to move when he turned the adjuster at around 2:40, but it is not clear enough to see for sure. That could have been in my imagination.
Looks to me like the motors are mounted on a cross vice, I have one very similar to his.
