what is the purpose of the 24 hour wait after oiling (other than to stop people "looking at it" and accidently wiping the oil away?)

It may be what celsoari said, but I have an idea it could be to prevent oxidation while the coating has a chance to fully cure and harden, which goes right along with his comment
