Just like decorating a cake
I have used one of those many times, not the powered ones, ones like a cake decorating bag. I never had the need for a powered one as the times needed were few.
I did do a boys HS in NJ (8,000 sq. ft. on mud) three of us grouted a little over 1,500 sq.ft. (12x12) in 5 hours.
One summer I was a little slow and offered to help out a mason friend. The one and only time, a 12x12 tile is a lot lighter than a 12" concrete block!
If you buy the premixed sand and mortar lime from a home store, it will not flow like this, you must add more lime, or portland cement (if the hardness is OK). Otherwise it will not be a 'plastic' mix. In general, using the home store mortar mix makes buttering any block or brick work very difficult, as you need that plasticity to get it to flow and stick to the block edge.
