Nice build with surprisingly meagre results.
As the guy asks for suggestions here's my 2 cents :
Tighten all gibs and check lathe rigidity, especially the compound - try replace it with another block bolted to the cross slide directly.
Check the grinder's runout, check/ dress uneven surfaces of the wheel for minimum unbalance.

I use these Proxxon wheels myself, and a red one is right for plain steel, AFAIK.
In my chinese Hilda cheapo grinder I get excellent results with these 60 grit disks in DIYed arbors when tried on BMS.
I always use Saran Wrap around my chuck when grinding and freshly wetted "bedsheets" on the lathe, but still awfully messy and noisy.

Today, for a really nice finish on coarse turned hot rolled, I first use a shear tool (a ground 8 mm masonry drill bit slanted 20 degs in a square holder), and then finish off by "cold rolling"/ burnishing the last 1/1000 of a mm, with a cheapo ball bearing mounted like so:

Über-fine feed & 1 krpm, infeed 2-3 thou for MY setup. Rust seems to not set as easily on it either (as it does on merely turned).

    YMMV.
