Companies that do this charge by the pound You should have your materials to be dipped sand blasted washed and dried and if there and tubular or areas where the zinc can collect there needs to be holes drilled at the highest and lowest points otherwise sealed tubes cannot get coated on the inside or the zinc will settle in the cavities and add weight and in general make for a screwed up looking job.
Never try to tell me it can't be done

What is all of the bubbling? Moisture, oil? I would think the item to be dipped would be clean and dry.

When you see bubbling of even worse vapor and spray usually means there are either moisture or contaminants or both. There will always be some bubbling and vapor because you are lowering a room temperature object into a vat of molten metal with temperatures above 840°f normally between 850 and 950 but never above 1050°f

There's a large galvanizing company call AZZ nearby me. I've sent some catwalks (outside for signs) to them as well as gangways for our machines. They did most of the cell tower sections around here back in the day. And for sure, you want to drill holes not only to allow the zinc to go out, but to allow it to coat the inside evenly for outside applications. If you leave the tubes sealed, at that temperature you can get bloating and other deformities plus, your tube can rust from the inside out if it's out in the weather.
