That's a great trick. That's some of the worst oil I've ever seen though. There appears to be crud floating in it.

Ither crud in the oil or something being washed down his finger, either way the check and ball valves in a bottle jack don't like debris.
Another note is Hydraulic jack oil doesn't play well with some automatic transmission fluids, but I've been guilty of having to use it on a leaky old bottle jack in a pinch.
