What a waste of edible vegetable matter.

Pumpkin is most wasted food substance grown on this planet.other than the seeds and the occasional pie made from them. some like pumpkin preserves or pumpkin butter (very tasty) the pumpkins are largely just wasted, for instance that whole field was harvested only for the seeds to be roasted and sold as a snack.
Pumpkins are rich in vitamins A, K and C and minerals such as zinc, copper, magnesium and potassium — nutrients that hydrate dry skin and stimulate hair growth. Beta-carotene, the antioxidant that gives a pumpkin its vibrant color, converts to vitamin A in the body and provides another layer of protection from sun damage.
There are 1000's of home recipes for pumpkin uses. However since no one knows how to cook anymore those are mostly forgotten.
The pumpkin meat could be added to animal feed as a supplement to their diet Deer love pumpkin as do most other animals hogs goats chickens turkey And farm raised fish can benefit from the nutritional value of the fibrous pumpkin guts around the seeds, even beef cattle but too high of a percentage would not be good for cattle still there is no denying there are millions of tons of pumpkin waste produced each year. Tilling them back into the soil does add amenities to the soil though.

As far as I'm concerned the only palatable way to eat pumpkin is to feed it to a pig and then eat the pig.

My best guess from poking around a bit: maybe pumpkins grown for seeds are a specific pumpkin variety with unpalatable or even inedible flesh?

That is probably the case, however the meat and guts of even those could be dried and ground then added to many different animal feeds as a nutritious filler

Perhaps the real advantage is that the pulp can be "fed" to the field, making next year's crop of whatever much greater. The seeds are just a byproduct that can be sold. Or not.
