If you are looking to build AR platforms, I would suggest you have a look at the Magpul AR wrench, it has to be the best I have seen or used. They also have a tool I recently picked up, the BEV Block. This works far better than the clamshell type of fixture I was using.
When it comes to AK tools, I have taken some ideas from AK builder, and built my own rivet fixture, and I even used an old microwave oven transformer to build a spot welder for the AK rails. Your best bet is to do some looking around, and see what you think will work.

Being a gunsmith I'm always looking for punches. Concave ends, roll pin, straight.
Gotta be strong AND tough.
Gotta have short strong starters and longer to drive pins out.
Punch body that lets one replace the punch itself w/o having to replace the whole thing when they break/bend/ give out.
Don't know about AKs so much. Pretty simple. AR tools are so reasonable & readily available.
Know what you mean about punches...I make my own from drill rod on the lathe. The drill rod is also easy to temper.
Gunwork is a favorite of mine as well...I regard real gunsmiths as ultimate Toolmakers. Got my start, 1960's reading about J.M. Browning in sixth grade.
Anyway, on replaceable punches; I built them like the primer punch of reloading dies but far more depth of engagement in the body. Bottomed out in the head for positive impact. 01 Drill rod for softer punches, drill blanks for tough ones. Bodies of drill rod too, but W2, was economical, machined and knurled beautifully.
