    I am the only one in my family that has any interest making Ravioli. Its a lot of work but worth it to me. The kitchen aid has a attachment that flattens the egg/flour mix to 6 inch wide sheets, no more rolling pin. The recipe calls for a roasted pork shoulder with garlic cloves, Italian sausage, spinach, Parmigiano Reggiano cheese and a few other ingredients.

    That sounds good, do you have the full recipe? The last I made was with Mushrooms, cheese and ground veal.

    I do, its my grandma's recipe who got it from grandpa's mother (he came over as a baby on a ship). I still remember sitting at the supper table with grandma and grandpa eating ravioli when I was about 6.
    2 lbs. roast pork with garlic cloves inserted into the roast (amount of garlic is up to you)
    1 cup of canned spinach
    1 lb of sweet Italian sausage
    3 eggs
    1/2 cup of parmigiano reggiano cheese (from whole foods, its the good stuff, I am generous with the cheese)
    1/2 tsp of nutmeg
    dash of allspice
    salt and pepper to taste
    Remove surplus fat from the pork roast and run it through a meat grinder. Mix the remaining ingredients in a large bowl and assemble. My wife takes issue with letting the ravioli sit out over night to dry but that's the way the wops in my family prepared it (no one has taken ill yet). I like stealing the deformed ones (all the guys did) and sample the recipe. The next day, the dried ravioli is boiled in beef broth till tender before layering in a tall casserole and used grandma's spaghetti sauce and reggiano cheese between the layers. This is a brief run down.
