The end of the video suggests that the large roots near the surface were cut before the stump was removed. Many of the numerous videos of the winch and wheel thing don't show that preparation. Anyone who has ever dug out a stump soon learns that doing so makes the operation much easier and way less messy than just using brute force. If trees weren't so tough, they wouldn't have lasted so long. Also, put a blanket over that cable and chain setup. Yikes

Or make the control cable a LOT longer

I was waiting for the wheel to shoot sideways. Ouch!

That is an excellent suggestion about placing a blanket over the cable and chain.

Adding in some mechanical advantage (MA) would be quite helpful.

There are two "advantages" here. Mechanical is the length of the fulcrum (i.e., diameter of the wheel) and the pivot point (the ground) lifting the trunk up via a horizontal force (the winch). The other advantage is that trees are designed to resist horizontal wind loads but not vertical loads. Pulling them up is easier.
