for degreasing hands, I used to use dish liquid - if it cuts grease in the kitchen, it works on my hands as well. I still use that trick, but I have also taken to using "simple green" directly, and one of those citrus grit liquid soaps (Champion HT-100) and had good success with that as well.
Rick's suggestions about letting soap dry on your hands is a trick used for camping as well.. wipe the outside of your camp cooking gear with detergent, and let it dry... then when you wash the gear, the accumulated soot, etc falls away easier.
