Are you calculating/measuring angles for your edge, or just getting close enough to the existing angle?
I am sure that tomato can't tell an 8 degree angle from a 9 degree angle.

If you're not reprofiling an edge, the best way to set the angle is to draw on the bevel with a sharpie, then find the correct angle using light test strokes that grind fully across the edge bevel by observing the ink taken off.

I am using protractor application on a smartphone. It turns out a very accurate measurement.

At first, I planned to calculate the angle according to the size of the device, this would give an accuracy of about + - 1 degree, taking into account the different projections of the knife tip. Based on the calculations, just make a set of sticks that would allow you to quickly measure the distance from the base to the bottom of the hinge. But using the application turned out to be easier, with higher measurement accuracy.

This is a good tip - I use a felt-tip pen when sharpening a chisel and a scissor (I prefer to sharpen knives on the protractor)
