    Prevent someone from refilling the bottle with Mogen David and reselling it for what the label says.

    Prevent stirring up the residue in the bottle.

    If the bottle was stored properly, cork end slanted down, the cork may have residue on it that could contaminate the wine if disturbed.

    These are known as Port tongs and are more usually used for opening vintage port and less so for old wine to avoid bits of cork as Marv suggests.
    Done properly it gives a clean break with no loose glass bits.
    Vintage port is one of my favourite tipples.
