I'd hate for her to kick me with her right leg.

Back in the day, women were the packers of pattern packed oranges (it's about close packing of equal spheres). Anyway, the forearms on these women were scary impressive. Another time I saw the forearms of men in the cantaloupe sheds. Popeyes each and all.

Surely there's a better way to do that. It looks like they parked that person there because they haven't finished building it yet. A weigh scale at each station, when you hit the target weight a conveyor belt or even a pneumatic kicker ejects the container. She's going to get injured any day now.

I wonder how many weeks a year an orange packing plant operates. Don't they have a super short season?

Most of the large California's San Joaquin Valley packing houses operate year round, though during the summer and early fall months, when packing Valencia oranges, they mostly operate on a part time basis. In California the busy season is navel oranges, which typically runs from late October to early June. Then the packing houses are usually running flat out. Orange packing typifies large corporate agriculture. Two grower-packer outfits control about 1/3 of the deal, last I knew.
