Yes: hand filing is indeed enjoyable. With a cared-for precision vise and self-made auxiliary tools like this one. Seeing all kinds of knives in the video: Normal files will become dull after some strokes. Try 'Corinox' files with a hardness of HRc69 (which is about the end of the hardness scale) which are way harder than most kitchen knives (HRc50...58).
