Just like other places using trains conveyor belts and a host of other things to move food from one place to another. If their coffee is any good the gerbil tubes are unnecessary. Things like this are employed as distractive entertainment for otherwise mediocre quality.
The wife and I stopped at a restaurant somewhere that had trains traveling throughout the establishment. We sat down and waited and waited for a person to show up and take our order. Finally, this young lady made her presents known at our booth. I thought she was there to take our order, but she was there to ask why we had been sitting there for 10 minutes and hadn't ordered yet. Apparently, we were supposed to fill out our order on one of the menu cards then flip the railway signal for a train to stop. OK, so I filled out a card signaled for a train after a couple of minutes the train stopped I placed the card in the slot of one of the box cars flipped the signal and it rolled away. 20 minutes later the train stopped at our booth once again. with our order. the food was cold and tasted like cardboard. We ate it anyway. When we were finished, I tossed a couple of 20s on the table and started to walk out. We were stopped at the door. Sir you are supposed to signal a train for your bill and deposit your payment either by card or cash the train will bring your receipt. There's 40 bucks laying on the table where we sat it should be more than enough to pay for the crap you called food and walked out.
