    Looks like he’s done that a few times. What is the purpose of the back stroke on the surface to be cut…is that just a rhythm thing?

    Looks like he is using the back stroke as you called it to align his next lower cut, note how he holds the plunge knife against the left side as he slides out and loweres just the depth of the side gage before plunging in for another cut.

    He's cutting the left hand edge of his next draw.
