How I love the action of packing house machinery.
USDA standards allow a percentage of defects within the pack including misshapen decay, bruising, cuts, blemishes. Everything is added up. For example, if the count per box is, say, 100, then a total of 9 defects are in the pack on arrival, the pack is considered to be 91% US1 In California oranges, that would be an acceptable pack at shipping point. The trick is to get to arrive with not more than 85%, which includes various types of deterioration: decay, skin-breakdown, discoloration, etc. Nope, I don't know spuds.
