I remember Julia Child fussing about the fact that turkey producers could, but did not, remove the tendons from turkey legs. Do they do that to those turkey legs they sell at the fairs, renaissance festivals, and other places? Seems it would be a bigger problem when you are wandering around gnawing on one, instead of tackling it at the table.

I am curious if they have to be de-boned first. They didn't show him working on a leg with a bone in it.

If I'm not mistaken, they are all attached at the base of the leg, so I assume some sort of mechanical contraption could grab them there and pull them all out at once. Since I'll have a couple of legs to dissect in a bit, I will report back my findings.
