Fun fact: The Meso Americans as early as 1600 BC used the acidic sap of the morning glory to coagulate latex making a usable rubber. Apparently they understood a little about practical acid-base chemistry even if they could not state the Arrhenius equation. (Yep, I know, eponymous formulae) This was about 3400 years before Goodye.
The modern diet is entirely dependent on the indigenous North and South Americans.
