Proper set up. Making sure it's banked a little. We use these when we're servicing or replacing our regular roller conveyor. They're height adjustable and it expands from 5' long to about 30' long.

does the orientation of the wheels have an impact? - I played around with the one at my local airport, and I could feel real resistance to things sliding across the wheel, as opposed to along the wheel, but that was with soft loads (duffel bags), not harder more rigid surfaces (boxes) - the wheels on the one I looked at were smooth metal (aluminium)
I always figured it was easier for the load to move in the direction of the wheels, and the sideways forces across the wheels never got high enough to force the load sideways, but I wasn't able to bend the airport one around to test my theory

It's the same principle as a fixed, curved roller type conveyor. As the flexible conveyor "bends" to create the curve, the axles move too making the wheels angle with them and has the same effect as a roller conveyor curve. There are actually flexible roller conveyors too:
