Not really sure what we have here. I've seen a similar technique for rabbits, without the knife, called squeeze gutting or push gutting. Anyone?

Looks like he's carving the entire fish out of the skin from the inside, not just the guts.

In England it's called Paunching a rabbit, some clever people can do it by a simple flick of the wrist.
