A woodworker would trace the contour of the laid block onto the block that was being fitted and then cut to that outline. Perhaps a similar method was used for stone working. Also, blocks on some of the ancient Greek and Roman buildings show coloring traces that show that a chalk of some sort was smeared on the laid block and then the block being fitted was test fit and the color transfer indicated what needed to be removed.
The Inca were masters of mortarless stone building. I've noticed that the edges of almost all their join lines are rounded so the visible join line lies below the finished surface of the wall. I would love to know why they did that.
