    He could be doing it for much the same reasons some Blacksmiths will frequently allow their hammer to strike the bare anvil. they don't do it so much to hear the ring, but to relax and reposition their hands. Note he slaps the handle with his forearm. and flexes his hand. usually on a half-cut piece of cane.

    If you look at a piece of sugar cane you will notice the growth rings, that's what is being tossed away.
