    I have used ice cubes when making gravy to skim off the last of the grease, it works pretty well.

    That is a Chinese dish called Hot-Pot, and they have the split pot for boiling broth, usually one side is super spicy (lots of chili oil) and the other side is mild. Once its boiling, then you put in small thin slices of pork, beef, fish balls, vegetables and cooking a bit at a time at the table, and pulling out the food with your chop sticks to eat it.
    Along with it, you typically make up a bowl of dippers to dip the food in after cooked. The dipping bowl is your own concoction of the spices and dips... usually based on a peanut sauce with garlic, salt, szechuan pepper, chili peppers, oils, and so on. The dip sauce that you make is really the key to having a successful hot pot meal.
