    By vacuuming out most of the air the urchin can be preserved for an extended period of time. Plus when the customer is rummaging through the counter they won't be as likely to be pricked by the spines.

    yeh I get that, And I must admit that when Gates and Fauce stated that we should eat grubs and insects, I was ok with that so long as the first two grubs were Gates and Fauce.

    I get that these things are literally dumb as rocks and unlikely to feel pain or fear. That said, it seems pretty f*ed up to vacuum seal a still-living creature into a little plastic baggie.
