Handheld potato slicing technique - GIF

Handheld potato slicing technique. I always find myself counting the person's fingers when I see GIFs like this.

SO many of these guys never look at what they are doing this may be because they have done it for so long they rely solely on muscle memory which in many cases is more dependable than eye contact.
Never try to tell me it can't be done

Why is it so many of the Asian countries do everything on the ground?

If you watch closely, it is using his fingers to touch off on the side of the blade to keep his orientation correct.

They work on the ground like that because they CAN. No need for a table when they can be comfortable like that.

I remember when I could squat like that. No, I guess I don’t.

I can still squat like that. However, I can’t get back up, and once I did get up my knees would be screaming for days.

The video looks to be sped up. Still cool.

That’s not sped up. With enough practice you need to slow open a video to see a chefs movements.
