I recall many years ago using the small version of those to burn resin to stink up the house...

These are sped up considerably. We used to use those for incense in the catholic church, it was the altar boys job to light them, let them catch properly, then add incense & bring out the censer. We usually dumped the incense on too soon after lighting & got are asses chewed by the priest till someone figured out you had to light it & give it 2-3 minutes before it was ready to burn. I was in charge of lighting it one time after that & I got things going in good time, had about 4-5 minutes of time for the coal to get REALLY hot, dumped on the incense & handed it off to the altar boy who was delivering it to the priest. The kid carrying it was scared of it, so much smoke was pouring out of it. The priest would, wave it at the altar where he stood then work his way around clockwise in a circle. By the time he got 3/4's of the the censer was just dumping smoke like crazy & the altar boy on that side of the altar disappeared in the cloud. His face was quite a shade of red when he came back into view. The father was VERY pleased with our work that day.

Maybe to light the actual cooking charcoal but not to cook over. I bet they give quite an unfavorable taste to the food.

with any kind of charcoal no matter how you light it the key to cooking with it or wood for that matter is to build a large enough fire and allow it to be reduced toi nothing but glowing coals before starting to cook. adding more charcoal or wood during cooking will ruin the true flavor of the meat unless your cooker has a solid plate instead of an open grill. A solid plate cooks by heat alone so the flame never comes in contact, but you might as well be cooking in a skillet on the stove top
Never try to tell me it can't be done
