Some of the best cuisine comes from ancient Chinese recipes, fantastic food.

What about that food that is a hard no for you?
Having lived in China, I've seen and eaten a lot of Chinese food, and this particular stir fry is pretty basic.... looks to be some green pepper and red pepper slices with some rice noodles flavored with some soy sauce.
That said, there are as many kinds of Chinese food as there are provinces in China, and there are a lot! Shanghai style food is sweet and kind of bland. Sizhuan has the spicy/numbing peppers, South China provinces have more spicy food. There are also many, many weird specialty dishes that are not very good (in my opinion), like congealed duck blood soup, fried duck tongue, and many others that I passed on.
The American Chinese food that is available in the US is not really authentic Chinese food, it has been highly Americanized, some more so than others.
I've been to China and several other places in the orient. Not about to eat anything that smells like it was cooked in last year's dirty dishwater made with vegetables and other plant substances I have never heard of or some kind of noodles, and meat with the wrong texture Probably chicken,
