The route has to be well planned out or you might get to try a new kind of BBQ. There was a place near Seguin, TX that had a giraffe. Story goes it arrived there when it was young. Now it is basically stuck there as there was not a route out that did not have a height restriction. Not sure I buy it but makes for a good story. Guess they do not tranquilize them for transport.
It might be difficult to safely anesthetize a giraffe. They have high blood pressure to get blood up that neck to the brain. If they lower their heads to drink, restrictors in the neck arteries prevent the powerful heart from blowing out a cranial artery. Anesthesia might interfere with the operation of that mechanism and laying them flat in that condition might kill them.

Here's a bit more on giraffes...
Their blood pressure is about twice that of a human - systole and diastole. Their hearts are huge, about ten kilos, and are asymmetric so the ventricle that pumps to the brain can produce more pressure. They can, and do, lie down but almost always hold their neck and head erect when they do so - perhaps to watch for predators but possible also because of the blood pressure problem.
An interesting thing to ponder is how they transfer giraffes over long distance, e.g. over oceans. A super-guppy might allow them to fly standing up but they would probably freak out due to the noise and unusual movement plus the cost would be exorbitant. Housing them in a ship's hold might work but getting them in and out could be tricky.
