    looks like the 555 is running as a Pulse width modulator and using the MOSFET for current capacity. This is a nice tidy package for space constrained control boards - my taig lathe uses a commercial version of this circuit (24VDC electric scooter speed controller) and due to the MOSFETs in that it can handle 300W but is considerably bigger and needs some form of cooling to survive.

    these circuits are great to have, and I'm hoping to get good enough at electronics to build a similar one for 380VDC input - I think there i have to use triacs though instead of MOSFETs.

    The schematic is shown in the video, but I took a snapshot and is shown below:
