A ball joint is the most adjustable but, given that your stand already has three degrees of translational freedom and rotational freedom around the vertical, you only really need an up-down nod/tilt motion to be able to point the camera anywhere.

A simple block of wood drilled to rotate about a horizontal shaft and fitted with a lockscrew to hold it in place would provide that. Most still cameras have a 1/4-20 female screw joint to attach to a tripod so a bolt that size in the block would hold the camera.
