Are you calculating/measuring angles for your edge, or just getting close enough to the existing angle?

I am using protractor application on a smartphone. It turns out a very accurate measurement.

At first, I planned to calculate the angle according to the size of the device, this would give an accuracy of about + - 1 degree, taking into account the different projections of the knife tip.
